Now listen, I love an aesthetically pleasing cocktail, there’s simply no doubt about it. But if a drink doesn’t have great flavor behind all the beauty? No thank you, that is simply not the libation for me.

Fortunately, the Violet Blue Empress has the best of both worlds! It’s a straightforward yet incredibly tasty dessert cocktail that highlights the complex flavors and gorgeous color of Empress Gin. This butterfly pea-infused spirit has quickly become one of my favorite gins, and gets bonus points for being local! It’s distilled just a few hours away from my Seattle-area home, in beautiful Victoria, British Columbia.

Empress Gin was named after Victoria’s famed Fairmont Empress Hotel. Almost castle like, this beacon of hospitality has welcomed travelers from around the world since 1908. It has become an iconic piece of Canadian architecture and is well known for its sweeping vistas and one-of-a-kind afternoon tea service. Here, you can spend a relaxing afternoon tasting a variety of house-made pastries served in an elegant space fit for royalty. The distillers of Empress Gin loved the tea service so much that they decided to combine the hotel’s unique blend of handpicked tea leaves with a careful selection of botanicals to create the gin we now enjoy.

Soft hues of blue with a foamy top? Talk about a stunning presentation. For those of you with Instagram accounts, this is one cocktail recipe that’s as pleasing in taste as it is to the eye.

  1. Step 1 – In a cocktail shaker combine the ingredients in a shaker filled with ice.
  2. Step 2 – Shake well.
  3. Step 3 – Double strain into a chilled cocktail glass.
  4. Step 4 – Top with whipped cream and fresh flower.
  5. Step 5 – Serve and enjoy!
