The Rosé Aperol Spritz is a summer cocktail that checks every box. It’s light, citrusy, and effortlessly elegant. This sun-ready sip takes the iconic spritz structure and gives it a seasonal twist with fresh grapefruit juice and a splash of simple syrup, topped with dry sparkling rosé for that crisp finish.
Built over ice and garnished with a delicate orange peel rose, it’s the kind of drink that turns even the simplest moment into something worth toasting.
Long, sunny afternoons and spritzes go hand in hand, and this version leans into everything that makes summer cocktails great.
Aperol brings the classic bitter-orange base, while grapefruit juice adds extra citrus brightness. The rosé brings effervescence, dry fruit notes, and just the right hint of blush to the glass.
It’s the kind of drink that feels refreshing without trying too hard.
Whether you’re hosting poolside, packing a picnic, or just enjoying the warm breeze, this spritz brings easygoing sophistication to every pour.
If you’ve been following me for a while, you’ll know I’m a huge fan of a tasty Spritz. I’ve made several variations of this classic sipper, so let’s get into what makes this one stand out!
Step 1: Fill a wine glass with ice.
Step 2: Pour in the Aperol, grapefruit juice, and simple syrup.
The core of the cocktail, Aperol, adds a bittersweet orange depth and a signature vibrant hue. It’s what gives this spritz its backbone and complexity without overpowering the lighter ingredients.
But this wouldn’t be an Aperol Spritz without Aperol taking center stage.
Fresh grapefruit juice sharpens the citrus profile and adds a refreshing tang. It plays perfectly with the rosé’s fruit notes and lifts the Aperol’s bitter edges.
Grapefruit juice is one of my favorite mixers to add in a cocktail recipe as it tends to smooth out the drink.
Now, to add in some sweetness, just a touch of simple syrup balances out the tartness of the grapefruit and Aperol. It keeps the cocktail light, not sugary—perfect for warm-weather sipping.
Step 3: Top off with sparkling Rosé and garnish.
Rosé adds bubbly texture and a touch of elegance. It gives the cocktail a blush-pink color and layers of dry fruit flavor that elevate the spritz beyond the ordinary.
Besides, who doesn’t love some bubbly?
The garnish of this sipper is eye-catching but super easy to put together. By simply taking an orange peel and rolling it up, you get a cute little rose garnish.
It also infuses the drink with subtle citrus oils, making the garnish both functional and stunning.
The Rosé Aperol Spritz is made for warm days, good playlists, and those laid-back summer moments that call for something light, flavorful, and undeniably pretty. It’s easy to make, easy to sip, and always a crowd-pleaser.
