Picture yourself lounging beneath swaying palm trees, the warm ocean breeze brushing against your skin as you take your first sip of the Pineapple Coconut Mojito. This tropical concoction is paradise in a glass, ideal for sipping on after a long day when you just need to let loose!
Tropical cocktails are delicious, and if you’ve been following me for a while you’ll know I’ve whipped up my fair share of tropical recipes. Whether it’s the classic Painkiller or Punch Drunk Love, tropical flavors always seem to hit the spot. So, I wanted to create an island-themed mojito recipe and voila! The Pineapple Coconut Mojito was born. It’s a smooth, fruity mixture with a refreshing finish, I mean, what could be better?
Pineapple takes center stage, infusing the cocktail with its vibrant and juicy sweetness. With each sip, you’ll experience the tropical essence of ripe pineapples, adding a tangy and refreshing note that lingers on your tongue. To balance the sweetness, I muddled the diced pineapple with traditional mojito ingredients: lime, mint leaves, and sugar.
Aside from pineapples, nothing screams “the tropics” like coconuts! The creamy coconut cream lends a luxurious and velvety texture, adding a touch to the mix. Meanwhile, the coconut water brings a light and crisp element, quenching your thirst and making every sip incredibly satisfying.
Your traditional mojito typically has rum in it, but I wanted to take this recipe one step further and mix in some pineapple rum to tie it all together.
Step 1: In a cocktail shaker, muddle pineapple ,mint, sugar, and sliced lime. Reserve some pieces of pineapple and mint for the garnish.
Step 2: Once muddled, add rum, coconut water, coconut cream
Step 3: Shake and pour over ice.
Step 4: Garnish with pineapple and mint
