Jungle Bird


It’s time to whip up yet another classic cocktail recipe, perfect for those summer days when all we want is to sit under the sun with a lovely cocktail in hand. It features a unique blend of bold flavors that balance sweet, bitter, and tropical notes all in one glass.

I want to begin by sharing a bit of background on this recipe, as it is a classic. The Jungle Bird was created in the late 1970s at the Kuala Lumpur Hilton’s Aviary Bar—a fitting birthplace for such an exotic cocktail. Originally classified among the tiki drinks, which were all the rage at the time, it was designed to transport its drinker to a tropical paradise.

Like most tropical-flavored cocktails, the foundation of this drink is rum. In this case, we’re mixing in some blackstrap rum, which is the soul of the Jungle Bird. Blackstrap rum is darker and more robust than your average rum, with a molasses-heavy flavor that adds a rich, smoky sweetness to the drink. In my opinion, this gives the Jungle Bird a bit more depth than we may be used to. If you don’t have blackstrap rum at your home bar, any type of dark rum will suffice!

No tropical cocktail is complete without a splash of pineapple juice. It brings a bright, fruity sweetness that cuts through the rum’s intensity. The acidity of the pineapple juice also helps balance the sweetness of the rum, essentially rounding out the bold notes of the mixture.

Here’s where things get interesting. Campari, an Italian bitter liqueur, adds a layer of complexity with its herbal and slightly medicinal notes. It serves as a counterpoint to the sweetness of the pineapple juice, creating a captivating push-and-pull on your taste buds.

Like most cocktail recipes, lime juice (or any citrus juice) is a staple, and just a dash does wonders. Lime juice injects a tangy zest, lifting the heavy flavors and brightening the entire drink. To soften up the edges and blend all the flavors together, a touch of simple syrup is added. It’s just enough sweetness to ensure every sip is as pleasing as the last.
