Mojitos are a crowd favorite and it’s easy to understand why. I love mixing up a mojito when I’m in the mood for something citrusy and refreshing. Today however, I’m swapping the classic variation featuring white rum with a bold, dark rum. Not only does this alter the hue of this cocktail mixture, but it completely transforms the flavors within the recipe. The dark rum adds a rich, smoky flavor to the cocktail and gives it a deeper, more complex profile.

White rum is the base spirit within the traditional recipe, but today we’re going to be swapping it out. This will make the cocktail flavor to a Dark & Stormy or a Mai Tai, as both cocktails are mixed up with dark rum. This is definitely a recipe that will cater to those who appreciate a richer flavor profile in cocktails. Dark rum is known for having notes of caramel, toffee, and vanilla, as well as hints of spices like cinnamon and nutmeg. The addition of lime and mint balance these intense notes, and bring out that classic mojito taste. I also opted for a sugar rim so that the mixture has a smooth, sweet finish.

Step 1: Rim a highball glass with sugar then drop in lime wedges, mint leaves, and sugar.
