I’m excited to share with you today my home made Chamomile Honey Simple Syrup! It happens to be the same simple syrup used in my Chamomile Honey & Whiskey Sour cocktail recipe, so be sure to check that out as well.
Some ingredients are quiet stars—they never steal the show, but they bring warmth and depth to every sip. Chamomile Honey Simple Syrup is one of those ingredients. It’s soft, floral, and just sweet enough to complement cocktails beautifully—especially in a whiskey sour.
But don’t stop there: this syrup is equally at home in a cup of tea, drizzled over fruit, or added to sparkling water when you want a little extra something.
And the best part? It couldn’t be easier to make.
There’s something about the pairing of honey and chamomile that feels effortlessly soothing—and when blended into a simple syrup, it brings that same vibe to whatever you’re mixing. In cocktails, it adds a subtle floral layer and rounds out sharp citrus or bold spirits.
In my Chamomile Honey & Whiskey Sour, it’s the key to softening the edges of the whiskey while enhancing the drink’s warmth and complexity.
It also plays well with gin, vodka, and even tequila-based builds—making it one of those syrups that deserves a permanent spot in your fridge.
Step 1: Pour the boiling water into a jar then add in the honey.
Honey brings more than just sweetness. Compared to standard simple syrup (which uses granulated sugar), honey adds depth, softness, and a rich, almost velvety mouthfeel.
It also naturally complements the gentle, herbal notes of chamomile—creating a base that feels layered and warm.
Opt for a good-quality honey you enjoy on its own; it’ll shine through here.
Step 2: Take the 3 chamomile tea bags and steep them into the mixture.
Chamomile is the star of this syrup, infusing it with floral, grassy, and softly herbal notes. It gives the syrup a soothing character that pairs beautifully with whiskey, gin, and vodka.
Steeping the tea in hot water and honey allows those delicate flavors to fully open up and blend seamlessly into the syrup.
Step 3: Give it a good shake and let the simple syrup sit for a few minutes.
Allow the mixture to steep for several minutes to your preferred strength (5–10 minutes works well). The longer it steeps, the more pronounced the chamomile flavor will be.
Finally, it’s important to remove the tea bags and pop the jar into the fridge to cool completely.
Chamomile Honey Simple Syrup brings warmth and a soft floral sweetness to cocktails that call for something a little more nuanced than plain sugar. Whether you’re building a cozy sour, an herbal spritz, or a soothing nightcap, this syrup adds depth without overpowering the glass.
Caution: Be sure to let the syrup cool down in the fridge for a couple of hours before putting it to use. It will keep for about two weeks stored in the fridge.
